The wine program

A list builtfor the fire

Thoughtful, unfussy, and chosen to pour beside wood-fired cooking. Ask our team. There's a bottle here for every table.

Food First

Every bottle earns its place beside the fire. We pour wines that make the food taste better, not the other way around.

Old World, Open Mind

Burgundy and the Rhône share the list with Carolina-friendly finds and small growers worth knowing.

By the Glass

A deep, rotating by-the-glass selection so you can match each course without committing to a bottle.

Provenance

Small growers, long friendships

Chef Noble's love of wine began in Napa Valley in 1982, with the discovery that the right bottle makes the food, and the table, better. Four decades on, the list leans on small-production, family-owned properties from Italy, France, Spain, and the U.S., sourced in partnership with Eric Solomon of European Cellars and chosen for discovery over scores.

Bin 19

The rotating spotlight

Every few months we shine a light on one Eric Solomon selection we love, poured and sold at a generous discount, so trying something new never feels like a gamble.

Miracle Wine

A bottle that gives back

Our own Willamette Valley Pinot Noir, made with the Charlotte Mecklenburg Dream Center. One dollar from every bottle sold supports their work feeding our neighbors.

At the bar

Cocktails with the same intent

Our bartenders cook with the same pantry as the kitchen: seasonal fruit, herbs, house syrups, and Copain Bakery espresso. The result is a short, sharp list of cocktails that change with the calendar.
